Go green! Stuff an avocado with salsa for a delicious snack.

I hope you're all experiencing a little of the 'luck-o'-the-Irish' today and that the sun is shining on you in some way (even if there's still snow on the ground).
I've been meaning to share this snack, appetizer, lunch, or salad suggestion for a while. It's so easy it's not even a recipe - it's really just an idea, and maybe one you already know. It's my go-to, throw-together lunch when I'm working, or at home.
It only involves two ingredients (avocado and salsa) and takes about 30 seconds to prepare.
And it's green, so I thought today would be a perfect day to share it.
I've often served these as an appetizer, or salad course, before the meal, giving each person a filled avocado-half on a separate small plate. The portions are perfect if you can find smallish avocados.
If I pack one for lunch, I pack along a whole avocado if it's small, or a half wrapped in clingfilm, and a small container of salsa. The avocado is a creamy, super-dense powerhouse of nutrients, perfectly contrasted with the spicy, zing of a fresh salsa. Healthy and flavourful, this is an energy-providing boost to your day.
Avocado with Salsa
Cut an avocado in half and remove the pit. (Hack into the pit with a sharp knife and twist.)
Place onto pretty plate and fill the cavity with your favourite salsa. (Or just stand at the counter and hold it in your hand, scooping out the insides with a spoon, like I do when I'm home alone and in a hurry for lunch!)
Serve with a small spoon, and extra salsa on the side (because the cavity can never hold as much salsa as you need!) Scoop some luscious avocado and zippy salsa in each spoonful. How simple is that?
