For the crumble topping:
⅓cup35gms quick-cooking oats (gluten free if necessary)
3tablespoonsflouror a gluten-free flour blend
2tablespooncoconut sugar or brown sugar
2tablespoonssoft butter or coconut oil
¼teaspooncinnamon
¼teaspoonginger
⅛teaspoonfine sea salt
Instructions
Cut the apples in quarters and cut out the cores. Slice each apple quarter as thinly as possible on the mandoline. Once you have one apple sliced, push the slices into a neat heap on the cutting board and, using a large sharp knife, cut down through the pile in half-inch (1 cm) intervals to reduce the size of the apple slices to large flakes. Repeat with the remaining apples. You should have about 6 cups of sliced apples.
Place all the apple flakes into a 1½ to 2 quart casserole dish.
In a small bowl, stir together the teaspoon of flour and the ½ teaspoon cinnamon. Whisk in the maple syrup, lemon juice, water, rum, and vanilla. Pour this mixture over the apples and toss with a rubber spatula to coat all the slices. Cover with a lid or with plastic wrap with a hole poked into it (to allow steam to escape) and microwave on high power for 3 minutes.
While the apples are microwaving, mix up the crumble: combine the crumble ingredients in a small bowl, and use your fingers to work the butter into the dry ingredients until all the flour is incorporated and the mixture is evenly crumbled.
Remove the casserole dish from the microwave and remove the cover. Stir the apples, then pat them down so they are evenly spread out in the dish. Scatter the crumbles over the top and microwave, uncovered, for an additional 4 minutes on high. The apple slices will be heated through, but still be partly crunchy.
Serve warm with a spoonful of vanilla ice cream (or this dairy-free homemade one) or whipped cream.
